Job Title: Sushi Chef – Maki Station

Position Summary:We are seeking a highly skilled and detail-oriented Sushi Chef to join our rapidly growing culinary team, specializing in the Maki (rolls) station. The ideal candidate will have a strong understanding of modern sushi preparation techniques, with a focus on speed, consistency, and presentation. You will be responsible for preparing maki rolls to order, maintaining mise en place, and ensuring the highest standards of food safety and quality.
Key Responsibilities:Prepare a variety of maki rolls (traditional and signature) with precision, speed, and artistic presentation
Ensure proper handling and storage of ingredients, with attention to freshness and inventory rotation (FIFO)
Follow standard recipes and plating guidelines to maintain consistency and portion control
Collaborate with the kitchen team to ensure smooth service and timely execution of orders
Maintain a clean, safe, and hygienic working environment, complying with all food safety standards
Assist in receiving and inspecting fish and produce deliveries, reporting quality issues to the Sous Chef/Chef de Cuisine
Contribute to daily prep work, including slicing vegetables, seasoning rice, and portioning proteins
Support quality control and communicate proactively about any product shortages or operational issues
Minimum of 2 years of experience in a sushi kitchen or similar role, with hands-on experience at the maki station
Solid knife skills and understanding of sushi-grade fish, rice preparation, and sushi rolling techniques
Familiarity with Japanese ingredients, flavor profiles, and plating aesthetics
Ability to work in a fast-paced, high-volume environment with attention to detail and consistency
Strong communication skills and a collaborative, team-oriented attitude
Food Handler Certification (or willing to obtain)
Ability to stand for extended periods and perform repetitive tasks
Comfortable working in cold environments and handling raw seafood
Must be able to lift up to 50lbs as needed
